Guest guest Posted October 11, 2005 Report Share Posted October 11, 2005 This recipe is one of my favorites and can be made easily vegan by omitting the cheese; it really doesn't need it, though i do enjoy it at times. The flavor gets better the longer it marinates, but usually this salad is gone after a day here. Black Bean Fiesta Salad 1 can (15oz) black beans, rinsed and drained 1 cup frozen corn, thawed 1 green pepper, diced 1 sweet red pepper, diced 1 cup diced red onion 2 celery ribs, chopped 3/4 cup cubed Monterey Jack cheese 3 Tbs lemon juice 3 Tbs red wine vinegar 2 Tbs olive oil 2 garlic cloves, minced 1 Tbs Italian seasoning 1 tsp pepper 1/2 tsp ground cumin In a large bowl, combine beans, corn, pepper, onion, celery and cheese. In a jar with a lid, combine the remaining ingredients; shake well. Pour over vegetable mixture and toss gently. Cover and chill for 2 hours or overnight.
