Guest guest Posted October 11, 2005 Report Share Posted October 11, 2005 That delicious-sounding Italian sandwich reminds me of another sandwich an Italian-American friend introduced me to many years ago: Coursely chop mild green peppers and onions. In a small mixing bowl, break one egg (per sandwich -- these are made one at a time), beat, and then mix in a small amount (1/2 or 3/4 C.) of the pepper/onion mixture (add a little salt and pepper at this point). Melt butter (or heat oil) in a small skillet, pour in the mixture, and cook like a small omelet, turning over when done on first side. When finished cooking, simply place between two slices of your favorite sandwich bread. For me, no topping or condiment is necessary for this one, and my friend never added anything. Idon't like the pepper as crunchy when it is mixed with an egg in the sandwich.
