Cauliflower Leek Soup ¼ - ½ cup butter 3 leeks or 2 leeks plus one onion, or 3 onions, chopped 2 - 8 cloves garlic, peeled and chopped 2-3 stalks celery, chopped 2-3 carrots, peeled and chopped 1 head cauliflower, chopped 8 cups vegetable broth salt & ground pepper to taste (I go heavy on the fresh ground pepper!) 1 cup milk or cream (optional, and not really necessary) Melt butter and add all chopped vegetables; sauté for 10 minutes. Add vegetable broth and bring to boil. Reduce heat and simmer for 45 minutes. Remove from heat and puree using an immersion blender. Season with salt & pepper. Thanks for sharing it, Catherine. i just love my hand-held immersion blender. i don't know how i ever did without it.
