Recipe: Cauliflower & Leek Soup

Another favourite of mine... great for this cooler weather!

 

 

Cauliflower Leek Soup

 

¼ - ½ cup butter

3 leeks or 2 leeks plus one onion, or 3 onions, chopped

2 - 8 cloves garlic, peeled and chopped

2-3 stalks celery, chopped

2-3 carrots, peeled and chopped

1 head cauliflower, chopped

8 cups vegetable broth

salt & ground pepper to taste (I go heavy on the fresh ground pepper!)

1 cup milk or cream (optional, and not really necessary)

 

Melt butter and add all chopped vegetables; sauté for 10 minutes.

Add vegetable broth and bring to boil. Reduce heat and simmer for 45

minutes.

Remove from heat and puree using an immersion blender.

Season with salt & pepper. Add milk or cream, and blend until smooth.

Adjust seasonings.

 

Enjoy!

Oooh, this sounds wonderful. Thanks for sharing it,

Catherine. i just love my hand-held immersion blender.

i don't know how i ever did without it. And to think the

person who gave it to me did so because she never used

it except to make the occasional milkshake!
