Orange Carrot Bread Bread ~~~~ 1/4 cup finely shredded carrots 1/2 cup sugar 1/4 cup orange juice (use fresh since you need the peel for the topping) 1 Tblspn. oil 1 egg or 2 egg whites 3/4 cup all purpose flour 2 tsps. baking powder teeny dash of salt Topping ~~~~~ 2 Tblspns. sugar 1 Tblspn. grated orange peel Preheat oven to 400 degrees and spray 8 or 9 inch cake pan with non-stick cooking spray. In a large bowl combine carrots, 1/2 cup sugar, orange juice, oil and egg. Mix well. Add flour, baking powder and salt and stir until just combined. Don't beat!!!!! Pour into prepared pan. In a small bowl, combine the topping ingredients, mix well. Sprinkle evenly over top of batter. Bake at 400 degrees for 14 to 19 minutes or until bread is light golden brown and springs back to the touch in the center. Cool on rack for a few minutes. Cut into 12 wedges and enjoy warm.
