" Cranberry Zucchini Round Bread " 1/2 cup sugar 1/2 cup shredded unpeeled zucchini 1/3 cup milk (soy or rice milk work fine) 1 Tblspn. canola oil 1 egg 1 cup all purpose flour 2 tsps. baking powder 1/2 tsp. cinnamon Dash of cardamom (optional but I always use it) 1/4 tsp. gr. cloves (I usually leave this out and up the cinnamon a touch) 1/2 cup sweetened dried cranberries 1 Tblspn. sugar if desired for topping dash of salt Preheat oven to 400 degress and spray a 8 or 9 inch round cake pan with non-stick cooking spray. In large bowl combine 1/2 cup sugar, zucchini, milk, oil and egg, mix well. Add flour, baking powder, dash of salt, cinnamon, cloves and dried cranberries, mix just until combined. Don't beat. Pour into prepared pan and sprinkle with 1 Tblspn. of sugar (optional) Bake at 400 for 12 to 19 minutes or until light golden brown. Cool 5 mins. Cut into 12 wedges and enjoy warm. Last night I made the baby bella mushrooms, jasmine rice, mixed greens salad, and a grilled bun. Yummy! Ice tea to drink. Now the zucchini should be firm so hold it up, it should be ssoft or rubbery , and pick them with unblemished medium to dark green skins. This is easy bread to make.
