Zucchini and Mushrooms with Sauce and Egg Noodles

Hi everyone. I used the Squash Casserole as a springboard of sorts and came up

with a new recipe. I didn't have several of the ingredients, but Squash sounded

really appealing. I made this Saturday and the Family loved it.

 

 

Zucchini and Mushrooms with Sauce and Egg Noodles

 

 

 

Ingredients

 

4 large zucchini, halved lengthwise and sliced

 

1 pound mushrooms, sliced

 

1 onion, chopped

 

2 cloves garlic, minced

 

1/3 cup sliced green onion

 

1 teaspoon salt

 

1 1/2 Tbsp. + 1/4 cup butter (divided use)

 

1 Tbsp. olive oil

 

2 (10.75 ounce ) cans condensed cream of mushroom soup

 

1 cup vegetable broth

 

1 (8 ounce) can sliced water chestnuts, drained (do not eliminate)

 

1 large carrot, sliced

 

2 teaspoon tarragon

 

1 Tbsp. fresh dill, chopped

 

1 teaspoon white pepper

 

1/2 cup shredded sharp Cheddar cheese

 

1 package (12 oz.) wide egg noodles

 

 

 

In. large skillet, saute chopped onion in 1 1/2 Tbsp. butter and olive oil until

almost translucent. Add garlic and saute for a few minutes more. Add zucchini

and carrot and cook for 5 minutes on med-high heat. Add mushrooms and saute for

5 minutes. Add cream of mushroom soup, tarragon, dill , white pepperand salt.

Mix thouroughly. Add vegetable broth and water chestnuts, mix again. Reduce to

medium heat. While vegetables and sauce are cooking, prepare egg noodles

according to package directions. Drain and add noodles back to pan. Toss with

remaining butter and green onions. To serve, put noodles on plate, top with

vegetables and sauce and sprinkle with cheese . Serves 8

this sounds great Kim.

I use cream of mushroom soup and cream cheese mixed as a sauce on many things.

I do so love cream of mushroom soup, LOL.

 

I bet those water chestnuts were just great inthere, gave it a nice crunch huh?
