Chai Concentrate 4 c water 2 cinnamon sticks 4 cardamom pods, lightly crushed to break pods 6 whole cloves 1 inch fresh ginger, thinly sliced 7 or 8 black, pink or white peppercorns pinch fennel seeds 3 tbsp loose leaf tea, preferably Assam 1/2 c sugar, or to taste 4 c soymilk Bring the water to a boil in a saucepan. Reduce the heat and add the spices. Simmer for 10 minutes. Add the tea and steep for 5 minutes. Strain the tea and add the sugar. Let cool and then refrigerate. To serve, warm equal parts soymilk and tea. Sweeten as desired.
