Guest guest Posted October 9, 2005 Report Share Posted October 9, 2005 Gingerbread Loaves (Julie this recipe makes wonderful muffins, bake them 18-20 mins) 3/4 cup packed brown sugar 1/2 cup butter or margarine, softened 2 eggs 1 cup molasses 1/2 cup boiling water 1/2 tsp. baking soda 2 3/4 cups flour 2 tsp. baking powder 4 tsp. ginger 2 tsp. cinnamon 1 tsp. allspice 1 tsp. ground cloves 1/4 tsp. salt Heat oven to 350 degrees and grease two 8X4 loaf pans. In large bowl combine brown sugar and butter, beat until light and fluffy. Add eggs and beat well. In a small bowl combine molasses,boiled water and baking soda, mix well. Beat into brown sugar mixture. In a medium bowl combine flour, baking powder, ginger, cinnamon, allspice and salt. Mix well. Gradually add the dry mixture to wet mixture until well blended. Spoon batter into greased pans and bake at 350 degrees for 40-50 minutes. Or until toothpick inserted comes out clean. Remove from oven. Let sit 15 mins. Remove from pans and cool on wire rack. Glaze Place 1/2 cup powdered sugar with 1 to 2 tablespoons of lemon juice in bowl and, mix well, brush over cooled loaves. " I guarantee you, this place will blow your mind. One of my fave breakfast recipes ever is for gingerbread waffles.
