I posted this recipe the other day and finally got around to making

it. it isn't too bad--I left out the crushed tortilla chips and put

them on after baking. also instead of pepperjack cheese I used regular

jack cheese with a small can of diced green chiles--think egg bake

with a twist : ). it wasn't quite spicy enough for me so will likely

reheat it with salsa. overall it was pretty good for something

different with squash......... : ) ...........

This reminds me, tonight to watch the game with I made this dip.

Don't laugh, it's hamburger helper taco dinner, LOL.

I followed the directions on the box to cook the rice in the sauce, just

eliminated the ground cow is all. Then when it was nearly done I added a can of

veggie refried beans, cooked another couple of minutes, topped with the cheese

sauce that comes with it, and a little of my own grated cheddar, and I added 2

chopped scallions also. I didn't use those mini chips that came with it that you

are supposed to mix in, I am saving them to have with soup or something, and

instead just served this as a dip with Tostitos bite size chips.

Lemmy tell ya, very easy and out of this world good. We all ate it, everyone

kept raving over and over, and my 17 year old said, " are you sure there is no

meat in this mom? "
