Guest guest Posted October 9, 2005 Report Share Posted October 9, 2005 Making this today for a BBQue Roasted Sweet Onion and Garlic Spread Serve this sweet and mild onion spread on toast points alongside a salad, or use it as a spread on sandwiches. 2 medium sweet onions (Texas Sweet, Maui, Vidalia, or other) 2 teaspoons olive oil 2 teaspoons honey or maple syrup 4 - 6 large cloves garlic, peeled 1/8 teaspoon salt Toast or crusty French bread Peel and quarter onions. In a large bowl stir together oil and honey. Add onions and garlic, stirring to coat. Transfer mixture to a greased 2-quart square baking dish. Bake, uncovered, in a 350 degree F. oven for 30 to 40 minutes, stirring occasionally. Remove from oven; cool. Place in food processor or blender container. Add salt; cover and process or blend till smooth. Serve on toast points or crusty French bread. Makes about 1/2 cup (24, 1-teaspoon servings). 15 calories per serving.
