Guest guest Posted October 8, 2005 Report Share Posted October 8, 2005 GARLIC-POTATO CASSEROLE 2 large potatoes -- sliced 1/4-inch thick 2 tablespoons olive oil 2 tablespoons of water 1 large onion -- diced 1 1/2 teaspoons garlic -- minced 2 teaspoons parsley -- chopped\salt and pepper to taste 1. Pre-heat the oven to 400°. Heat the oil in a skillet. Add the onion and cook until soft. Add the garlic and cook for 2 minutes longer. 2. Lightly oil a medium casserole dish. Layer in the sliced potatoes. Pour the mixture over the potatoes, and also 2 tablespoons of water. Cover and bake for 1 hour (or until the potatoes are tender). Garnished with parsley and serve.
