Potato and Barley Soup

 

2 tsps. olive oil

1 cup chopped onions

1 clove of garlic crushed

6 cups of broth

3 medium potatoes peeled and cubed

1 cup carrots thinly sliced

2 celery stocks chopped

1/2 cup barley, uncooked

2 bay leaves

1/2 tsp. dill weed

salt and pepper to taste

 

Heat oil in large saucepan and saute onion and garlic. Cook stirring

frequently, until onion starts to brown, about 3 minutes.

Add remaining ingredients except salt and pepper. Bring mixture to a boil, then

cover, reduce heat and simmer for 45 minutes until vegetables are tender.

remove and discard bay leaves. Salt and pepper to taste.
