Now Jenni can make a vegan version with no egg and her Earth Balance margarine. I don't mind chewy peels in my pie but i've found most folks don't like them. rarely peel potatos either. wonder how cornstarch would work in place of the egg? its a good binder in sweet breads, 2 tbls cornstarch beaten with 2 tbls water = 1 egg.
