I used a carrot peeler to she shred the carrots. I hope you like it. You could also use zucchini, eggplant, yellow summer squash some people call it yellow zucchini. I was reading messages from the posts and I got confused thinking this recipe came from Craige for soem reason. Now I see it's yours. Sounds wonderful. I like the carrot idea.
