Recipe: Escarole & Beans

This is similar to the kale recipe....very easy, very good and good for you!

Great for those nights when you want to get something on the table quickly.

 

3 T olive oil

2 large bunches escarole

4 garlic cloves minced

2 cans cannellini beans undrained

pinch red pepper flakes

veggie pepperoni slices (optional, but gives a nice flavor)

salt & pepper to taste

 

Wash escarole well and cut into 4 inch pieces.

Saute garlic in oil.

Add escarole and cook until tender

Add pepperoni, beans and seasoning

 

Cook until beans are heated and serve with crusty bread.
