I love Kale, I love all the greens, collard, mustard turnip, kale, spinach,

gimme em all with some margarine or butter and black pepper and salt baby!

Recipe:Kale and Bean dish

 

 

I just had a friend give me a huge bunch of kale from a farmers co-op. I've

never had kale. I went on line and found this quick recipe for kale and beans

and I LOVED IT! The lemon mixed with the beans have a wonderful taste placed on

top of slightly chewy kale and onions.

(my changes in ( )....this is what this group has taught me.....don't be

afraid to change ingredients!)

 

Try this recipe from Moosewood Restaurant Cooks at Home.

 

4 cups cooked white beans (I used 2 cans black

eyed peas

they looked white enough for

me, Drained)

lemon juice to taste (juice of one lemon)

salt, pepper, red pepper flakes to taste. (I didn't have

red pepper flakes so I sprinkled

on cajun seasoning..YUM)

 

1 pound kale

4 garlic cloves

1 onion

 

Mix beans, lemon juice, salt and pepper together.

Heat gently and mash slightly.

 

Chop onions and garlic. Saute until garlic golden.

Slice the greens into shreds and add to garlic/ onion mix.

Saute until greens wilted. (I cooked longer then just

just " wilted " )

 

Suggested serving - mound beans on topof greens.

 

(I took too long getting everything together and my beans started to dry out

while warming so I added some bean juice from the can AND I couldn't help but

add 1 T of butter into the kale and onions at the end of cooking)
