You can spread this on enchiladas too. It's very different from the regular salsa type. Thick Serrano Chili Paste 10 whole serrano peppers or jalapeno will work but I like the serrano 1 onion, chopped fine 1 or 2 garlic cloves crushed 1 teaspoon of salt very little bit of water or lime juice If you have a cast iron pan or in a very hot oven, roast the whole peppers until they are dark and charcoal looking, keep turning them. Cool them and remove some of the black skin. Place in a mortar and crush up with the rest of the ingredients until you form a paste, add a little water or lime juice until it makes a good paste. for Good Click here to donate to the Hurricane Katrina relief effort.
