Lentil Loaf in honor of PT and her Feral Veg group. Thanks so much you can snag something from out of here too.

I wanted to get permission before I posted it here. It's got PT's OK and I'm

happy we have it now for members o try. It's a vegan lentil loaf unless you use

vegetarian regular mayo.It gets a gold star. Enjoy!!! Even better the next day

in a sandwich.

 

" Lentil Loaf "

 

1 c lentils

3 c veg broth

2 c oats

1 c ketchup

2 heaping tbsp mayonnaise (vegan version)

1 tbsp worchestershire sauce (vegan version)

2 tbsp soy sauce

1 tbsp minced garlic

1/2 cup sliced almonds

 

Bring the broth to a boil and add lentils. Simmer 20 minutes. Turn off

heat and stir in oats, 3/4 cup ketchup, mayonaise, worchestershire sauce,

soy sauce, garlic, almonds, and 1/2 cup water. Stir well and place in a

greased loaf pan. Top with remaining ketchup and bake at 350 degrees for 30

minutes. Serve with mashed potatoes, mushroom gravy, and a green

vegetable.

 

Makes a great sandwich the next day too. You can use salsa instead of ketchup

to change it around.

I am bean ignorant. Should the lentils be soaked ahead of time, raw, or canned?
