I haven't made this in a while and I intend to make this soon, it's really good. 1 small eggplant cut lengthwise 1/4 cup chopped green pepper 4 tablespoons finely chopped onion 2 cloves of garlic finely chopped 1/4 cup margarine or butter 1/2 cup crushed herb seasoned stuffing 1 jar diced pimento (2 oz) grated parmesan cheese cut eggplant in half lengthwise. Remove eggplant leaving 1/2 inch shells. Cut eggplant into cubes. Cook and stir green pepper, onion and garlic in margarine or butter until tender, about 5 minutes. Stir in cubed eggplant, cook and stir over medium heat until eggplant darkens, about 5 minutes. Stir in stuffing and pimento. fill eggplant halves with mixture. sprinkle with cheese. bake in 350 oven until shell is tender, about 30 -35 minutes.
