"Squash and Pasta Toss" 2 Tblspns. olive oil 1 large onion chopped 2 cloves garlic minced 3 cups butternut squash diced in 1/2 inch cubes 4 cups vegetable broth 1 cup orzo or acini de pepe pasta (orzo looks like rice and acini looks like mini round balls) 1/2 cup grated parmesan or romano cheese 2 Tblspns. fresh chopped parsley or cilantro salt & pepper to taste *(optional - add a sprinkle of Mrs. Dash or Spike before serving) In skillet heat 2 Tblspn. olive oil and saute onion for about 6 mins or until slightly turning brown. Add garlic and cook another 30 seconds. Add squash and stir. Add 1/2 cup of broth and simmer over med. heat until liquid is absorbed and squash is just tender but not mushy. While squash is simmering bring balance of broth to a boil in another pan and add the pasta when broth boils. Boil until done about 8 mins. and pour off excess liquid. Combine squash mixture with pasta and toss. Heat through. Pour into a bowl, toss with cheese, basil or cilantro and salt & pepper and serve. NOTE!!!!!
