Light Tomato and Chickpea Sauce recipe

Quite easy to assemble this sauce and toss with your favorite pasta noodle.

I aim for fresh easy meals. A men in the kitchen. Help! I don't always find it easy.

 

Light Tomato Sauce with Chickpeas

 

1 cup seeded chopped tomatoes

1 cup canned drained chickpeas (garbanzo)

2 tablespoons of fresh chopped parsley

fresh pepper to taste

1 tablespoon of red wine vinegar

 

Put everything in the blender and blend until sauce forms. Heat and toss with pasta. I also enjoy this cold the next day.
