new member with recipe BROCCOLI AND TOFU IN SPICY ALMOND SAUCE

Hello Everyone here,

I was in the middle of a post when my screen went blank and I had to

restart my machine. I don't know if that post made it. If it did

indeed make it, please pardon my double post.

 

This is only the second forum to which I have posted, so excuse me

if I make a mistake with procedure. Please inform me and I will

correct any such mistakes.

 

I am a husband, and a father to one beautiful baby girl named

Samantha. I want to raise her vegetarian. When I try to discuss it

my wife she changes the subject. My wife is not a vegetarian. In

fact, the only other vegetarian in my life is a nice coworker. She

gives me recipes that keep me going. I like forums such as this

where the recipes have been tested, rather than just trusting one

simply downloaded from the internet. I tried that several times and

on a few occasions the food was trashed.

 

In conclusion I want to say thank you for supplying this forum. Here

is a recipe that I cooked the other night that turned out very well.

Our neighbor was visiting at dinner time, he stayed and enjoyed it,

and had not one comment on the meatlessness, LOL.

BROCCOLI AND TOFU IN SPICY ALMOND SAUCE

 

 

Ingredients:

 

Sauce:

1/2 cup hot water

1/2 cup almond butter (original recipe was for peanut butter -

I use almond cause I'm allergic to peanut)

1/4 cup cider vinegar

2 Tablespoons tamari sauce

2 Tablespoons blackstrap molasses

1/4 cup cayenne (this is a HUGE amount - I use 1-2 tsp.)

 

Saute:

------

1 lb broccoli

2 tsp ginger

4 cloves garlic

1 lb tofu, cubed

2 cup onion, thinly sliced

1 cup chopped cashews

2-3 Tablespoons tamari sauce

2 minced scallions

 

Instructions

 

Sauce: In small saucepan, whisk together almond butter and hot

water

until you have a uniform mixture. Whisk in remaining sauce

ingredients

and set aside.

 

Saute: Stir-fry half the ginger and half the garlic in 1 Tablespoon

of oil. Add

tofu chunks, stir-fry for 5-8 minutes. Mix with sauce. Wipe wok

clean,

saute remaining ginger & garlic in 2 Tablespoons of oil. Add onions

and fresh

pepper, saute for about 5 min. Add chopped broccoli, cashews and

tamari; stir-fry until broccoli is bright green. Toss saute with

sauce,

mixing in the minced scallions as you toss. Serve over rice.

Welcome to the group, Ron. Wow this recipe sounds great, James (dh)

would love this very much. I have had some delicious recipes from this

group, just last night tried the black bean burgers; they were awesome!

 

You keep cooking like this and perhaps your wife will stop changing

the subject! :-)

--- welcome Ron : ). I'm Anne and I'm fairly new here too : ). my

hubby is not a vegetarian either and my kids are fairly close but not

100%. what I am finding to work is not to say anything at home about

food/cooking because it's not worth the battle of words. that said, I

do the cooking here and if it's something I can accomodate my hubby

with easily, like a piece of meat on the side, then I do it. it makes

me ill but I respect his choice for right now. but casseroles and such

are veggie and he's OK with it now. in fact yesterday he decided kids

shouldn't have regular dairy ice-cream and bought them almond ice

cream treats--I'm still scrubbing chocolate out of kids' clothes

today : ) but his mindset is changing slowly. the point is lead by

example and your wife may follow but if not she may compromise in some

areas. my hubby tends to get defensive if I share my opinions

too " strongly " but quietly making some really stellar veggie dishes is

helping. welcome again : )..............
