I use kombu in my beans, takes down the gas and it adds a natural salt flavor. I use agar agar for gelatin. I can give you the book title when I get home. It's got a world of info in there for you. Much appreciated - thanks ;=) I don't have problems with beans, strangely, but I can't think kombu would be a bad idea - so many people enjoy it.
