Guest guest Posted September 29, 2005 Report Share Posted September 29, 2005 Jicama and Peach Salsa 1 cup jicama, peeled and diced1/4 cup red onion chopped1/2 cup roasted; peeled, chopped red bell pepper2 md peaches (or nectarines); pitted, chopped - I use white peaches in this recipe2 jalapeno or serrano chilies; seeded, chopped3 tb fresh lime juice1/2 ts chili powder; or to taste1 tb chopped fresh cilantro or mint In a medium glass bowl, combine the jicama, onion, red pepper, peaches, jalapenos, lime juice, chili powder, and cilantro.
