Guest guest Posted September 29, 2005 Report Share Posted September 29, 2005 3 lb red-skinned potatoes, diced 1/4 c. + 2 tbsp canola oil 1 tsp salt 1/2 tsp ground cumin 2 c. diced onion small can diced green chiles 2 tbsp chipotle chiles pureed with adobo sauce 4 oz shredded cheddar or vegan equivalent 1. preheat oven 375 degrees. lightly grease a baking sheet. 2. place diced potatoes in mixing bowl with 1/4 c. oil, salt, and cumin and toss to coat. spread on baking sheet. bake 25-30 miutes or till golden. 3. sate onion and green chiles in rest oil. add potatoes and chiles and toss well. place in greased baking dish and top with cheese. 4. bake 15 minutes or till cheese melted. serves 8 Anne Quote Link to comment Share on other sites More sharing options...
