She won't believe it's non-dairy. Just about 20 mins. before you serve it place it in the freezer and it will slice out in a nice firm slice. One spoon of preserves on top is bliss. I have eaten that cheesecake about 10 times and each time I still can't believe it's vegan and that I won't suffer afterwards. You have lots planned. Have a great time at the zoo too. I normally bake regular dairy cheesecakes in a waterbath for ultra-creaminess but am very unfamiliar with nondairy cream cheese and sour cream.
