This is another one from my "Lean andLuscious Meatless" cookbook. Counterfeit Tuna Salad2 cups finely shredded carrots1/2 small onion grated (about a heaping tblspn.)1/2 cup finely chopped celery2 Tblspns. sweet pickle relish1 Tblspn. lemon juice1/4 cup mayo or vegan mayo of your choicesalt & pepper to tasteIn a medium bowl combine carrots, onion, celery and relish.In a small bowl combine remaining ingredients and mix well. Add to carrotmixture, mixing well.
