I always make it whenI'm not feeling well, instead of chicken soup.Garlic & Rice Soup1 onion, finely chopped10 medium garlic cloves, chopped (I usually just use a whole head)3 tbsp olive oil1 c cooked brown rice3 c vegetable stock or water1 tbsp soy sauce1/2 c chopped fresh parsley (don't forget this -it's loaded with Vit.C and really makes the soup)In a skillet, saute the onion and garlic in the oil until golden andturning brown. In a saucepan, bring the rice, stock, and soy sauce to a boil.
