"Nutty Carrot Sandwiches" 3 large carrots, coarsely shredded2/3 cup raw pecans, finely ground1 small garlic clove, minced4 stuffed green olives, mincedVegenaise or mayo of your choice 16 whole basil leaves (or spinach leaves work well too)8 slices of bread (I love 7 grain bread with this) In a medium bowl combine carrots, olives, pecans and garlic with enough mayo to moisten well and hold ingredients together.Spread bread with a light coating of mayo, spoon carrot mixture on 4 bread slices.
