Spicy Thai Garlic Potatoes (perfect side dish)2 tablespoons water2 tablespoons lemon juice1 tablespoon olive oil1 teaspoon Worcestershire sauce (vegan version)1 teaspoon Thai chili paste (such as Dynasty)1/2 teaspoon dried oregano1/4 teaspoon salt1/4 teaspoon ground cumin1/4 teaspoon ground red pepper4 to 6 red potatoes (about 1-1/2 lbs), each cut6 wedges1 red onion, cut in 6 wedges1 red bell pepper, seeded and cut in 1/2-inchstrips8 cloves garlic -- peeled1. Preheat oven to 400 degrees.2. Combine first 9 ingred. in a large bowl; stir with a whisk. Addpotatoes, onion, bell pepper, and garlic; toss well to coat. Arrangevegetable mixture in a single layer in a shallow roasting pan; bakeat 400 degree for 35 min. or until potatoes are tender. stirringafter 20 min.
