this got a 2-thumbs up from non-veggie husband and my ever-more

adventerous 6-year-old : ). we threw some crushed tortilla chips on

top also.

Honey Whole-Wheat Crust

1 tbsp honey or raw sugar (I used sugar)

1 pkg yeast

1 c. warm water

1 1/2 tsp salt

2 tbsp canola or olive oil

1 1/2 c. whole wheat flour

1/2 c. white flour

cooking spray or oil

1. in large mixing bowl dissolve honey or sugar and yeast in warm

water. let stand 7 minutes, until mixture creamy.

2. stir in salt, oil, and whole wheat flour. add 1/2 c. white flour

and mix to achieve dough that is soft and springy. turn dough onto a

lightly floured surface and let rest for 5 minutes.

3. knead for 5 minutes, till smooth and elastic. lightly oil a

medium bowl, place dough inside, cover with a clean towel and let

rise 45 minutes.

4. punch dough down and divide in half. at this point dough may be

rolled and made into pizzas or rolled, prebaked, and frozen.

5. roll each half of dough into 12 " circle onto 12 " pizza pans. bake

for 5 minutes, or till crust is lightly browned and puffed. top with

selected sauce, cheese, veggies and bake ~15 minutes or according to

specific recipe.
