Honey Whole-Wheat Crust 1 tbsp honey or raw sugar (I used sugar) 1 pkg yeast 1 c. warm water 1 1/2 tsp salt 2 tbsp canola or olive oil 1 1/2 c. whole wheat flour 1/2 c. white flour cooking spray or oil 1. in large mixing bowl dissolve honey or sugar and yeast in warm water. let stand 7 minutes, until mixture creamy. 2. stir in salt, oil, and whole wheat flour. add 1/2 c. white flour and mix to achieve dough that is soft and springy. turn dough onto a lightly floured surface and let rest for 5 minutes. 3. knead for 5 minutes, till smooth and elastic. lightly oil a medium bowl, place dough inside, cover with a clean towel and let rise 45 minutes. 4. punch dough down and divide in half. at this point dough may be rolled and made into pizzas or rolled, prebaked, and frozen. 5. roll each half of dough into 12 " circle onto 12 " pizza pans. bake for 5 minutes, or till crust is lightly browned and puffed. top with selected sauce, cheese, veggies and bake ~15 minutes or according to specific recipe. Spicy Black Bean, Corn, and Cilantro Pizza Honey WW Crust from above 1 15 oz can black beans, drained and rinsed 1 c. prepared salsa 1 serrano chile (I omitted this and used jalapeno slices on top) 2 lg cloves garlic, minced 1 c. diced bell peppers 1 c. fresh or frozed corn kernals 4 green onions, thinly sliced (I used white onions) 1/4 c. chopped cilantro 1 c. shredded mozzarella, or vegan equivalent 1 c. shredded cheddar, or vegan equivalent 1 small avocado, diced sour cream to garnish we also used crushed tortilla chips to garnish 1. preheat oven to 450 degrees. lightly spray or oil 2 12 " pizza pans. prepare dough for crusts according to recipe through step 4. 2. in blender or food processor combine beans, salsa, chile, and garlic and puree till smooth. set aside. 3. on a lightly floured surface, roll each portion of dough into 12 " circle and place on prepared pan. bake for 5 minutes, or till crust is lightly browned. 4. spread crust with 1/2 bean mixture. top with 1/2 of peppers, corn, cilantro, green onions, and cheeses. bake 7-10 minutes, till cheese bubbly and crust is puffed and lightly browned. 5. remove from oven and place on rack to cool 5 minutes before cutting. top with avocado cubes and serve with sour cream, if desired. repeat with 2nd pizza.
