Guest guest Posted September 26, 2005 Report Share Posted September 26, 2005 It calls for a 12 inch round mold but I use a nice deep dish pie or quiche plate that measure 10 inches and a deep 9 inch works too. Very easy to make and it's versatile since you can add many different veggies. Delish too! Enjoy, Donna "Italian Pizza Rice Mold" 4 cups cooked rice2 eggs beaten1/2 cup Mozzarella cheese shredded (1 cup if you like more cheese) or vegan version1/4 cup chopped onion1 tsp. salt Grease mold or deep dish plate, heat oven to 350 degrees.Combine cooked rice, eggs, onions, salt and cheese. Mix well and press into mold making a crust. Filling~~~~1 jar favorite pizza or spaghetti sauce (15-16 oz.)1 tsp. Italian seasoningMix sauce and seasoning together and heat. Place sauce inside mold and top with your choice of:Sauteed veggie sausage, veggie pepperoni, olives, bell pepper, mushrooms, onions, etc. After you place topping then sprinkle a handful of mozzarella on top and a shake of parmesan and bake for 20 minutes. Cool 5 minutes, slice and serve.
