Fettuccine with Vegetables recipe posting

Making this tonight. This is one of our favorites so I'd like to take a moment to share. Make sure you have a nice plate of crunchy topped bread to serve with it.

 

Fettuccine with Vegetables10 ounces fettuccine (dry)*4 tablespoons garlic, minced 2 tablespoons garlic, minced2 large tomatoes, seeded and chopped2 cups corn kernels (fresh or frozen)1/2 cup of a good white wine1 tablespoon olive oil4 tablespoons fresh basil, chopped1/2 teaspoon salt, (pepper and red pepper fakes to taste)

Parmesan on top is an optionCombine garlic, tomatoes, corn, wine, oil and basil into a large pot. Coverand bring to a boil. Bring 4 quarts of water to a boil. Add pasta and stirto separate noodles. Cook about 8 minutes or until al dente. Drain. Add tothe dressing mixture and toss. Serve immediately and season to taste with salt, red pepper flakes and pepper.
