I make this as a soft taco stuffing sometimes too. BROWN RICE AND NOODLES 1 cup uncooked thin noodles, crushed up 1 cup uncooked brown rice 3 cups vegetable broth 1 garlic clove minced up 1/2 cup chopped up onion (optional if you want to add a jalapeno or diced canned mild chiles) Saute onion and garlic in a little olive oil until soft. Add noodles and saute over medium until coated. Add rice and stir. Add broth and chilies if used and bring to a boil. Cover and simmer on low until liquid is absorbed. Let stand 5 minutes.
