Guest guest Posted September 22, 2005 Report Share Posted September 22, 2005 This is my all time comfort samdwich.........."Potato Comfort Food Sandwich" (open face sandwich)I large russet potato1/3 cup sliced black olives1 large tomato sliced2 slices sourdough breadvegan mayo or regular mayobalsamic vinegarsalt & pepperolive oilPeel and slice potato into rounds.Boil slices until almost fork tender. Only takes a few minutes.Drain and let them cool down a littleHeat a little olive oil in skillet and fry potatoes until golden brown on bothsides.Salt and drain on paper towels.Toast bread and spread with mayo.Stack potato slices, olives and tomato on both slices of bread.Drizzle a ittle balsamic vinegar over top and sprinkle with pepper.Make sure you have someone there to eat the other one or you will eat them both.Yum!!!!!"We take a walk, the sun is shining down.Burns my feet as they touch the ground."Good Day Sunshine - Beatles for Good Click here to donate to the Hurricane Katrina relief effort.
