Guest guest Posted September 22, 2005 Report Share Posted September 22, 2005 These really look colorful when served and taste good too!"Peacock Vegetables"2 red onions cut into eigths2 small yellow squash cut into 1/2 inch strips1 sweet red pepper cut into 1/2 inch strips1 sweet yellow pepper cut into 1/2 strips1 green pepper cut into 1/2 inch strips4 cloves of garlic thinly sliced2 tsp. fresh parsley or cilantro minced1 tsp. balsamic vinegar1 tsp. olive oil1 tsp. dried oregano1/4 tsp salt1/4 tsp black pepperPreheat oven to 425 degreesPlace first 7 ingredients in bowl.Combine parsley or cilantro and next 5 ingredients in a jar and shake.
