These really look colorful when served and taste good too!"Peacock Vegetables"2 red onions cut into eigths2 small yellow squash cut into 1/2 inch strips1 sweet red pepper cut into 1/2 inch strips1 sweet yellow pepper cut into 1/2 strips1 green pepper cut into 1/2 inch strips4 cloves of garlic thinly sliced2 tsp. fresh parsley or cilantro minced1 tsp. balsamic vinegar1 tsp. olive oil1 tsp. dried oregano1/4 tsp salt1/4 tsp black pepperPreheat oven to 425 degreesPlace first 7 ingredients in bowl.Combine parsley or cilantro and next 5 ingredients in a jar and shake.
