She has extra time on her hands and is now beable to do all her baking and share her luscious treats with customers. I gaveher my full book of postage stamps and a self addressed envelope since she waskind enough to send me this recipe on a day off. These are the best and I'veeaten a lot of cookies in my day. Love, DonnaLEMON SNOWCAP COOKIES1/2 stick softened butter1 cup sugar1 tsp. lemon extract1 tbsp grated lemon peel1 3/4 cups flour2 tsp baking powder1 cup coconut1 cup macadamia pieces2 eggs (I use large)(powered sugar to roll cookies in)Preheat over to 350 degreesCream butter and sugar. Add lemon peel, eggs and extract.Stir in flour and baking powder. Add nuts and coconut.Shape into 1 1/2 inch balls. Roll in powdered sugar and place on greased cookiesheet.
