Hi Anne,

I use Vegan Gourmet. It melts perfectly.

I know if I eat more than a spirnkle of aged parmesan or a little tanlespoon of aged cheddar I feel the same way. Horrible! I really miss eating cottage, that was my favorite dairy but my tummy says NO!
