The girls are taking their morning nap and Brad is watching sesame street (my nephew) so I have a few minutes to post this recipe. This is mom's and I love it. Crust (only has one on top) 1 cup flour 1 tablespoon sugar 1 tablespoon baking powder 1/4 teaspoon salt 1/8 teaspoon cayene pepper 3 tablespoon cold, unsalted butter cut up 2 tablespoon shortening 1 cup shredded cheddar cheese 1/3 cup ice water Combine first five ingredients. Cut in butter and shortening until mix resembles coarse meal. Stir in cheese. Sprinkle on water. Stir until dough leaves sides of bowl. Shape into flat disk and wrap into plastic. Chill for one hour. Filling 2 1/2 cups apples, peeled and sliced 1/2 cup sugar 2 tablepsoon flour 1 tablespoon lemon juice 1/2 teaspoon cinnamon (mom adds more) Preheat oven to 450 degrees. Mix all ingredients together and spoon into 9 inch pie plate. Roll dough out into 13 inches round. Drape over apples. Crimp edges and make two slashes. Bake 20 minutes on a cookie sheet. Reduce heat to 350 degrees and bake 20 minutes more. Serves 8. I'd add some nutmeg and allspice to the filling. But that's because I love those spices. Maybe even a smidge of pumpkin pie spice.
