Ray POTATO PANCAKES 1 tablespoon of flour 1 tablespoon fresh parsley or dried parsley 1/4 teaspoon of salt 1/4 teaspoon of baking powder 1/8 teaspoon of black pepper 1 pound baking potatoes, it's 2-3 medium sized 1/4 cup chopped onions 1 egg yolk beaten cooking oil Combine flour, parsley, salt, baking powder and pepper, and set aside. Peel and shred potatoes to make 2 1/2 cups. Rinse with cold water, drain well. Stir potaoes and onion into the flour mixture and blend. Stir in egg yolk and mix well. Heat skillet and add 2 tablespoons of oil over medium heat. Drop 1/4 cup of potato mixture onto skillet and with back of spoon spread to make 3 inch circle.
