Not sure if there is a vegan version of feta cheese out there so I don't know if you can make this vegan easily. Jenni would know though. "Greek Wraps" Spread ~~~~~~ 2 oz. (1/2) cup crumbled feta cheese 1/4 cup chopped pitted kalamata olives 1/4 cup mayo of your choice 2 Tblspns. parsley, chopped Wraps ~~~~~ 4 (7 to 8 inch) flour tortillas (no lard) 8 leaves of lettuce 1/2 small zucchini, cut into julienne strips 1 large tomato, very thinly sliced 2 pepperocini chiles, drained, seeded and sliced In a small bowl combine all spread ingredients, mix well. Spread cheese mixture evenly over each tortilla to within 1/2 inch of the edges. Layer lettuce, zucchini, tomato and chiles over spread. Roll up each tortilla and serve. You can also cut these in pinwheel rounds and serve as an appetizer.
