This is tasty, nutritious and it's even better the next day. I bring it for lunch often. Denise you might like this, there's 6 gm. of protein and not too many veggies since you are having a hard time with eating those right now.

 

"Bulgur Salad"

 

1 cup dry bulgur

1 cucumber, peeled seeded and chopped

1 small red onion diced

1 cup chopped parsley or cilantro

1 garlic clove, minved

3 tablespoons of lemon juice

1 tablespoon olive oil

coarse salt and ground pepper

 

In a large bowl pour 1 cup of boiling water over the bulgur. Cover with plastic wrap, let stand until water is absorbed, about 30 minutes.

Add cucumber, onion, parsley or cilantro, garlic, lemon juice, olive oil, 1/2 tsp. salt and 1/4 tsp. pepper. Toss to combine. Serve this warm, cold or room temperature. This also makes a nice lunch with a slice of good bread the next day.

 

Note* I always toss in a handful of thawed peas and some walnut halves.

I have also made this with cooked couscous and it's very good also. To cook the couscous you need one scant cup of couscous and one full cup of boiling water, stir the couscous into the boiling water and cover pan, turn heat off and let sit 5 mins.
