Aegean Pasta 1/3 cup olive oil 1/2 cup pine nuts (whole) or walnuts (chopped) 5 cloves garlic, minced 2 10 ounce pkgs. frozen spinach thawed, drained and chopped 2 16 ounce cans of peeled Italian tomatoes chopped into bite size pieces 2 Tablespoons fresh chopped basil 1 lb. package of mostaccioli, ziti or penne shaped pasta 6 ounces of feta cheese 8 ounces of Greek olives, drained Boil pasta according to package directions and drain. Heat one tblsp. olive oil in skillet, add nuts, garlic and basil. Cook 4 minutes stirring as not to burn garlic. Add the 1/3 cup olive oil, spinach and tomatoes and heat through cooking on low simmer for 5 minutes. Toss sauce with pasta and serve in large pasta bowl.
