Last night we had a delicious curry with potatoes, mushrooms and spinach - YUM. I can post the recipe if anyone is interested but I have no exact measurements as I made it up as I went along. Yep, thats how I cook too. please do post it and here's my spinach or kale/potato recipe ( variations of my mama's scallopped potatoes/ 'm' word recipe LOL) ingredients: potatoes onion frozen spinach or kale garlic powder milk or water - veggie broth would work monterey jack or other mild white cheese ( or vegan substitute) salt + pepper - optional boil some potatoes, let them cool, slice slice an onion or two partly defrost spinach in baking pan ( i like a glass loaf pan for this) put a layer of potato slices, then a layer of onion, layer of spinach, sprinkle some garlic powder ( and salt + pepper if you wish), layer of thin sliced or grated cheese. repeat layers 'till the pans full, add about half a cup liquid before the final layer of cheese, ( this is why i like the glass loaf pan - 1/2 - 3/4 inch liquid in bottom of pan is about right) 350 oven 30-45 min when I have fresh mushrooms I put a layer of shroom slices on the spinach. another variation is beans instead of spinach and yellow cheese, usually some velveeta and some sharp cheddar.
