Guest guest Posted September 11, 2005 Report Share Posted September 11, 2005 This sounds odd but believe me this is good. Kids seem to enjoy them also. I made this up with leftovers years ago. "Spinach Sandwich: 1/2 bunch spinach or 1/2 bag of the frozen thawed 2 green onions chopped, including the tops 1 cup of frozen peas thawed or steamed and cooled 1 tomato, chopped couple tablespoons of Vegensise vegan mayo unless you have your own favorite mayo Optional * 1/2 small can sliced waterchestnuts diced. Or diced a chunk of jicama (adds crunch) Saute the spinach and green onions in a little water until done. I don't even use oil in this recipe. When done drain any liquid and let cool. Mix spinach and the balance of ingredients together and chill until ready to use. Toast your favorite bread and cover with topping and enjoy. It's good as a dip or on crackers also.
