Guest guest Posted September 11, 2005 Report Share Posted September 11, 2005 MOROCCAN CARROT SPREAD 1 pound carrots cut into 1-inch chunks and steamed until soft 3 Tablespoons olive oil 3 Tablespoons red wine vinegar 2 garlic cloves, minced 1 teaspoon paparika (Hungarian if possible) 2 teaspoons ground cumin 1/2 teaspoon grated fresh ginger salt, pepper and red pepper flakes if desired Place steamed carrots in a blender or processor and process until smooth and creamy. Add remainder of ingredients and blend well. Taste and adjust spices.
