These are very good. Nice little dessert for anyone watching calories and sugar.

 

"Baked Vanilla Apricots"

 

Fresh apricots, halved and pitted

2 teasponns water per apricot

Vanilla sugar

 

Top with nonfat soy or regular yogurt when served

 

Place apricots and water in a baking dish; sprinkle with vanilla sugar and bake in preheated 375 degree oven for 30-35 minutes.

 

Vanilla sugar: Store 2 vanilla beans with 2 cups of sugar in a covered jar for several weeks. The longer it is stored the better it tastes.
