"Pantry Fruit Compote" 1 16 oz. can pitted red sour cherries 1 20 oz. can unsweetened pineapple chunks 1 16 oz. can sliced peaches in own juice 2 Tblpsns. frozen unsweetened apple juice concentrate (frozen orange juice works too) 16 ounces unsweetened applesauce dash or cinnamon and nutmeg Drain cherries, pineapple and peaches. When well drained place a layer of each fruit in a one quart casserole dish. Add apple juice concentrate to applesauce and pour a tin layer over the top. Sprinkle with cinnamon and nutmeg. Bake in a preheated 350 degree oven for 20-30 minutes or until hot. Serve in sherbet glasses or top this over soy vanilla ice cream.
