Braised Spinach recipe post-vegan

I'm in my favorite spinach recipe area right now. That's good because spinach is so good for us.

 

"Braised Spinach"

 

1 cup vegetable broth

1 small onion chopped

1/4 tsp. red pepper flakes

1 1/2 lbs. fresh spinach washed and trimmed

2 Tblspns. white wine vinegar

 

 

In a large saucepan, heat the vegetable broth, onion and red pepper flakes until broth bubbles. Cover and simmer for 3 minutes.

Add spinach, cover and cook over medium heat for 5 mins.or until spinach has wilted.

Sprinkle with vinegar and toss.
