Guest guest
This is a nice side dish. "Warm Bean and Spinach Salad" 1 package (10 ounces) washed fresh spinach 1 can (15 ounces) cannellini or great northern beans, rinsed and drained 1 large red or green bell pepper, chopped (1 1/2 cups) 2/3 cup Italian dressing 1/4 tsp. garlic pepper (or a crushed clove of garlic and a dash of black pepper) 1/2 cup shredded mozzarella cheese (2 ounces) Remove large stems from spinach: tear into bite-sized pieces. Place spinach in large bowl. Add beans, set aside. Heat bell pepper and dressing to boiling in 1 quart saucepan. Reduce heat to low and stir in the garlic pepper or crushed garlic and pepper, cook uncovered for 2 minutes, stirring occasionally. Pour bell pepper mixture over spinach and beans, toss. Sprinkle with cheese and serve warm. (the hot dressing will wilt spinach just enough) "In the present position of the planets, it's impossible to say;Just when I'll find my course again, with the boulders in my way.I should be rolling down the skyway on my cosmic wheels;Instead of stumbling down this highway on my boots of steel"Source: Cosmic Wheels by Donovan
